Bacon Alfredo Skillet with Chicken combines crispy, smoky bacon with the creaminess of Alfredo sauce for a quick, flavorful meal.
Prep: 10 mins
Cook: 20 mins
Yields: 4-6 Servings
Ingredients
12 ounces Anthony's® Fettuccine
8 ounces thick-cut bacon
1 pound boneless, skinless chicken breasts, cut into small cubes
Salt and pepper to taste
1 jar (15 ounces) light Alfredo sauce
1/4 cup milk
1 package (6 ounces) fresh spinach
1/2 cup shredded Parmesan cheese
Directions
1Break fettuccine into two-inch long pieces. Cook pasta according to package directions; drain well and set aside.
2In large skillet, over medium heat, cook bacon until crisp; crumble and set aside. Reserve 3 tablespoons of bacon drippings in skillet, discarding the rest.
3Add chicken to skillet and season with salt and pepper to taste. Cook, stirring frequently, until chicken is done and slightly browned, about 4 to 5 minutes.
4Add Alfredo sauce to skillet. Add milk to Alfredo sauce jar; replace lid and shake well, pour into skillet.
5Add spinach to skillet and cook, stirring frequently, until heated through, about 2 to 3 minutes.
6Add drained pasta and crumbled bacon and toss gently. Sprinkle with Parmesan cheese and serve immediately.
Cook’s Tip: Omit spinach and add 1 can (15 ounces) artichoke quarters, drained.
I haven’t made this yet so I probably shouldn’t be reviewing this recipe, but I can just about taste it from watching the preparation and reading the ingredients. Awesome dish that is so simple yet full of flavorful stuff
