Prep: 15 mins
Cook: 20 mins
Yields: 4 Servings
Ingredients
8 ounces Mueller’s Angel Hair
1 tablespoon olive oil
7 minced garlic cloves
1/4 to 1/2 teaspoon red pepper flakes
7 medium plum tomatoes, seeded and diced
1/2 cup dry white wine or reduced sodium chicken broth
1 pound medium shrimp, peeled and deveined
1 tablespoon butter
1/4 cup chopped fresh basil
Salt and pepper, to taste
Directions
1Cook pasta according to package directions; drain and set aside.
2Heat oil in a large skillet, over medium-high heat. Add garlic and red pepper flakes and cook for about 1 minute, stirring constantly so that the garlic does not brown.
3Add tomatoes, salt, pepper and white wine. Bring mixture to a simmer, stirring occasionally.
4Add shrimp. Cook, stirring frequently, for 3 to 4 minutes or until shrimp turn pink and are done.
5Add butter and basil, and stir until butter melts. Toss with pasta and serve immediately.
Cook’s Tip
Serve sprinkled with shredded parmesan cheese, if desired.
Substitute 1 and 1/2 to 2 cups diced cooked chicken instead of shrimp. Proceed as recipe directs, cooking until chicken is hot.
